Breakfast in Bed - Caramel Pecan French Toast
My anniversary is coming up and to celebrate I was thinking a decadent weekend of relaxation and couple-dom. With that in mind, I want total pampering so went in search of a fun, delicous treat for Breakfast in Bed.
Caramel Pecan French Toast adapted from Andrea’s Troy-Bumpas Inn Bed & Breakfast
1/2 cup packed brown sugar
1/4 cup butter
1 Tbsp. light-color corn syrup
1/2 cup chopped pecans
18 to 20 1/2-inch slices baguette-style French bread
(about an 8-oz. loaf) or nine 2-inch; slices of French bread
3 beaten eggs
1/4 cups milk
1/4 tsp. vanilla
1/2 Tbsp. granulated sugar
1/2 and 1/4 tsp- ground cinnamon
1/8 tsp. ground nutmegIn a medium saucepan, stir together brown sugar, butter and corn syrup. Heat and stir until the butter is melted and the brown sugar is dissolved. Pour into a 3 quart rectangular baking dish. Sprinkle with half the pecans.
Arrange half of the bread slices in a single layer in dish. Sprinkle with the remaining pecans, and top with the remaining bread slices.
In a medium bowl, stir together eggs, milk, and vanilla. Slowly pour over bread. Press lightly with back of a large spoon to moisten bread.
Stir together granulated sugar, cinnamon, and nutmeg; sprinkle over bread. Cover and chill in refrigerator for 8 to 24 hours.
Bake, uncovered, in a 350° oven for 30 to 40 minutes or until lightly browned. Let stand 10 minutes. To serve, remove individual servings with wide spatula and invert onto serving plates. Makes 4 servings.

I love this recipe! We call ours Overnight French Toast and I don’t add the pecans (I don’t like nuts *g*) I make it for Christmas morning or sometimes when my kids have sleepovers. I even put it together in the mornings sometimes and we have it for dinner with scrambled eggs.
For side dishes, I’d say something savory like quiche - which is another dish you can make ahead and some fresh fruit *g* Oh, and Mimosas!

Mimosas sound lovely, Beth!!! And definitely celebrational and romantic. Great idea. I like the idea of quiche too. What I like best is the idea of making all of this ahead of time and then being able to send my hunk into the kitchen to fetch the food so I can lounge for a little longer

This is easy just some fresh fruit and a dip. Fun to feed each other.
Ingredients
2 cups vanilla yogurt
1/2 cup honey
1 teaspoon ground cinnamon
Assorted fresh fruit (such as apples, bananas, pineapple and/or strawberries), cut into wedges or bite-size pieces
Preparation
Combine yogurt, honey and cinnamon in small bowl; stir to blend. Place bowl on platter. Surround with fruit and serve.
